What's Tex-Italian?  It's an unbelievably good mix of sausage, picante sauce, orzo, zucchini and lots of melted cheese, cooked together on the stovetop to make easy work of preparing dinner.

What You'll Need

1 pound sweet Italian pork sausage, casing removed
2 cups Pace® Picante Sauce
2 teaspoons sugar
1 teaspoon Italian seasoning, crushed
1/4 teaspoon garlic powder
2 small zucchini, cut into cubes (about 2 cups)
1/4 cup Parmesan cheese
2/3 cup orzo pasta, cooked and drained (about 2 cups)
1 cup shredded mozzarella cheese (about 4 ounces)

How to Make It

  • 1

    Cook the sausage in a 10-inch skillet over medium-high heat until well browned, stirring often to separate meat.  Pour off any fat.

    Stir the picante sauce, sugar, Italian seasoning, garlic powder and zucchini in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes or until the zucchini is tender.

    Stir in the Parmesan cheese and pasta and cook until the mixture is hot and bubbling.  Remove the skillet from the heat.  Sprinkle with the mozzarella cheese.  Cover and let stand for 5 minutes or until the cheese is melted.
