What You'll Need

1 tablespoon vegetable oil
2 stalks celery, chopped (about 1 cup)
1 medium red bell pepper, diced (about 1 cup)
2 cups Swanson® Chicken Broth or Swanson® Chicken Stock
1 can (about 4 ounces) chopped green chiles
2 tablespoons tomato paste
1 package (about 10 ounces) refrigerated cooked chicken strips (about 1 3/4 cups)
2 cups uncooked instant white rice
1 package (about 4 ounces) chorizo sausage, chopped (about 1/2 cup)
1/4 cup chopped fresh cilantro leaves
1 dash hot pepper sauce

How to Make It

    Heat the oil in a 10-inch skillet over medium-high heat. Add the celery and pepper and cook until the vegetables are tender.

    Stir the broth, chiles and tomato paste in the skillet and heat to a boil. Reduce the heat to low. Stir in the chicken, rice and sausage. Cover and cook for 10 minutes or until the rice is tender. Stir in the cilantro. Serve with the hot pepper sauce, if desired.
