What You'll Need

2 tablespoons red wine vinegar
1 teaspoon prepared mustard
4 tablespoons olive oil
Black pepper
8 cups mixed salad greens (romaine lettuce, red leaf lettuce, arugula, watercress and/or radicchio)
2 green onions, thinly sliced (about 1/4 cup)

How to Make It

    Beat the vinegar, mustard and oil in a small bowl with a fork or whisk.  Season with the black pepper.

    Place the salad greens and onions in a large bowl.  Add the dressing and toss to coat.
