Campbell's Quick Mini Quiche Cups Recipe

How creative!  Tortillas are pressed into muffin tins to create a crust for these individual ham and cheese quiches, that get a little kick from a dash of hot pepper sauce!

What You'll Need

4 flour tortillas
3 eggs
1/3 cup milk
1 tablespoon all-purpose flour
1/8 teaspoon hot pepper sauce
1/2 cup canned whole kernel corn, drained
1/2 cup diced ham
3/4 cup shredded Cheddar cheese (about 3 ounces)
1 tablespoon chopped chives
1 dash salt & black pepper, to taste
1/4 cup Pace® Chunky Salsa

How to Make It

    Heat the oven to 400°F. Spray both sides of the tortillas with vegetable cooking spray and press them into large muffin tins or custard cups. Bake for 10 minutes or until the tortillas just begin to turn golden.

    Remove them from the oven and cool slightly. Beat the eggs, milk, flour, hot pepper sauce, corn, ham, cheese and chives in a medium bowl with a fork or whisk and season with salt and pepper, to taste.

    Pour the mixture into the prepared tortilla shells and bake for 20 minutes, or until the filling is set. Serve warm with salsa.
