What You'll Need

2 tablespoons unsalted butter
1 small onion, finely chopped (about 1/4 cup)
2 tablespoons all-purpose flour
6 cups Swanson® Chicken Broth (Regular, Natural Goodness® or Certified Organic)
1 can (15 ounces) pumpkin
1 cup applesauce
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 cup heavy cream
Freshly ground black pepper

How to Make It

  • 1

    Heat the butter in a 4-quart saucepan over medium heat. Add the onion and cook until tender, stirring occasionally.

    Add the flour to the saucepan and cook and stir for 1 minute.  Stir in the broth, pumpkin, applesauce, ginger and nutmeg and heat to a boil.  Reduce the heat to low.  Cover and cook for 20 minutes.  Stir in the heavy cream and cook until the mixture is hot and bubbling.  Season with the black pepper.
