What You'll Need
1/2 of an 8-ounce package cream cheese, softened
1/2 cup chopped fresh cilantro
2 tablespoons chopped onions
2 canned chipotle peppers in adobo sauce, drained and chopped
4 flour tortillas (8-inch), warmed
4 slices deli ham
1 small red bell pepper, cut into 2-inch strips
1 small green pepper, cut into 2-inch strips
Stir the cream cheese, cilantro, onions and chipotle peppers in a small bowl.
Spread about 1/4 cup cream cheese mixture on each tortilla to within 1/4-inch of the edge. Top each with 1 slice ham. Divide the red and green peppers among the tortillas. Roll the tortillas up tightly around the filling. Cut each roll in quarters.
