What You'll Need

8 large Yukon gold potatoes, thinly sliced (about 8 cups)
2 large onions, thinly sliced (about 2 cups)
2 eggs, beaten
1/2 cup matzo meal meal
4 cloves garlic, chopped
1 small green bell pepper, chopped (about 1/2 cup)
1 small red bell pepper, chopped (about 1/2 cup)
1/2 cup olive oil
1/2 teaspoon ground black pepper

How to Make It

    Heat the oven to 350°F.  Lightly grease a 3-quart shallow baking pan.

    Stir the potatoes, onions, eggs, matzo meal, garlic, peppers, oil and black pepper in a large bowl.  Spread the potato mixture in the pan.

    Bake for 1 hour or until the kugel is golden brown.
