What You'll Need

4 bone-in pork chops, 3/4 inch thick (about 1 1/4 pounds)
1/4 cup Smucker’s® creamy natural peanut butter
1/4 cup seasoned bread crumbs, toasted
1/2 cup finely chopped apple
1 large shallot or 1 small onion, finely chopped (about 1/4 cup)
Vegetable cooking spray
1/2 cup Smucker's® apple jelly or currant jelly, melted
Salt & pepper

How to Make It

    Heat the oven to 450°F. Using a small knife, make a "pocket" in each pork chop by cutting horizontally from the outside edge almost to the bone.

    Stir the peanut butter, bread crumbs, apple and shallot in a medium bowl. Evenly divide the bread crumb mixture into 4 patties.

    Open each pork chop pocket and place 1 bread crumb patty into each pocket. Using wooden toothpicks (2-3 per chop), close each pocket to prevent the mixture from falling out during cooking.

    Spray the pork lightly with the cooking spray. Heat a 12-inch oven-proof skillet over medium-high heat for 1 minute. Place the pork in the skillet and cook for 10 minutes or until it's well browned on both sides.

    Remove the skillet from the stove and place it in the oven. Bake for 20 minutes, or until the pork is cooked through. Baste the pork with the jelly during the last five minutes of baking time, if desired. Remove the toothpicks and season the pork with salt and pepper.

Easy Substitutions

  • Helper: To toast the bread crumbs, place the crumbs on a foil-lined baking pan and bake in a 300°F. oven (or toaster oven) for 3-5 minutes or until they're lightly browned.
