What You'll Need

Confectioners' sugar
1/2 cup cold water
3 tablespoons unflavored gelatin
2 cups sugar
1/2 cup light corn syrup
1/2 cup hot water
1/8 teaspoon salt
2 egg whites
1 1/4 teaspoons vanilla extract or your favorite flavor
Food coloring
Chocolate sprinkles or your favorite color (optional)

How to Make It

    Grease a 13 x 9 x 2-inch baking pan and lightly sprinkle with confectioners' sugar.

    Pour the cold water into a large bowl and sprinkle with the gelatin. Let stand for 5 minutes.

    Heat the granulated sugar, corn syrup, hot water and salt in a 4-quart saucepan over medium-low heat until the sugar is dissolved. Increase the heat to medium and boil the sugar mixture for 10 minutes or until a candy thermometer reads 240° F. Immediately remove the pan from the heat and pour the sugar mixture into the bowl with the gelatin mixture.

    Beat the sugar and gelatin mixture with an electric mixer on high speed for 8 minutes or until it is white, thick and tripled in volume.

    Beat the egg whites in a clean large bowl (with clean mixer blades) until they form stiff peaks. Gently whisk the egg whites, vanilla and food coloring, if desired, into the sugar mixture.

    Spread the sugar mixture evenly into the prepared pan and sprinkle with confectioner's sugar or sprinkles, if desired. Cover the pan and chill the mixture for at least 4 hours. Invert the chilled mixture onto a cutting board. Use a knife to cut into individual marshmallows or use a greased cookie cutter to cut out shapes.
