What You'll Need

3 pounds medium yellow squashes (about 6 squash), sliced
1 medium onion, chopped (about 1/2 cup)
1 small green bell pepper, diced (about 2/3 cup)
1 can (10 3/4 ounces) Campbell’s® Condensed Cream of Mushroom Soup
2 cups shredded Cheddar cheese (about 8 ounces)
1 1/2 cups Pepperidge Farm® Golden Butter Distinctive Crackers, crushed

How to Make It

    Place the squash, onion and pepper in a 3-quart saucepan with about 1/2 cup water. Heat to a boil over high heat. Reduce the heat to low. Cover and cook until the vegetables are tender. Drain the vegetables.

    Place the vegetables in a 2-quart microwave-safe dish. Stir the soup and cheese in the dish. Top the vegetable mixture with the crushed crackers, if desired. Microwave on HIGH for 15 minutes or until the vegetable mixture is hot and bubbling.
