What You'll Need

1 pound ground beef
1 medium onion, chopped (about 1/2 cup)
1 1/4 cups canned enchilada sauce
1/2 cup water
1 can (about 2 ounces) sliced pitted ripe olives, drained
5 Mission® corn tortillas
2 cups shredded Cheddar cheese (about 8 ounces)
Sour cream

How to Make It

    Cook the beef and onion in a 10-inch skillet over medium-high heat until the beef is well browned, stirring often to separate meat. Pour off any fat. Stir the enchilada sauce, water and olives in the skillet.

    Alternate layers of tortillas, meat mixture and 1/2 cup cheese in a round 2-quart casserole, ending with the cheese. Cover and bake at 400°F. for 25 minutes. Let stand for 5 minutes and cut into wedges. Serve with sour cream, if desired.
