What You'll Need

3 cups water
1 1/2 cups V8® 100% Vegetable Juice
1/2 teaspoon dried oregano leaves, crushed
1/8 teaspoon black pepper
1 small zucchini, cut into cubes (about 1 cup)
1 package (3 ounces) chicken flavor chicken flavored ramen noodle soup
1 can (about 15 ounces) red or canned white cannellini beans, rinsed and drained

How to Make It

    Stir the water, vegetable juice, oregano, pepper and zucchini in a 4-quart saucepan. Over medium-high heat, heat to a boil.

    Stir the noodles in the saucepan. Reduce the heat to medium. Cook for 5 minutes or until the zucchini is tender. Add the ramen seasoning packet and beans and heat through.
