Campbell's Individual King Cakes Recipe

Although King Cakes are a part of Mardi Gras tradition, these cupcakes are a treat anytime of year.  A piece of candy is baked inside each cake to add to the fun.

What You'll Need

2 1/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup unsalted butter, softened (1 1/2 sticks)
1 1/3 cups sugar
3 eggs
1 teaspoon vanilla extract
1 cup buttermilk or 1 cup milk mixed with 1 tablespoon distilled white vinegar
24 pieces candies (gumdrops, Swedish fish or gummy bears)

How to Make It

    Heat the oven to 350°F. Place liners into 24 (2 1/2-inch) muffin-pan cups.

    Whisk the flour, baking powder, baking soda and salt in a medium bowl and set aside.

    Beat the butter and sugar in a large bowl with an electric mixer on medium speed for 3 to 4 minutes or until the mixture is light and creamy. Add the eggs, one at a time, beating well after each addition. Add the vanilla and beat just until mixed.

    Add the flour mixture alternately with the buttermilk, beating on low speed after each addition, just until mixed.

    Fill each cup about one quarter full with the batter. Drop 1 candy piece into each cup. Add more batter to the cup, filling each cup about three-quarters full.

    Bake for 20 minutes or until the cakes spring back when pressed gently.

    Let the cupcakes cool in the pans on wire racks for 5 minutes. Remove the cupcakes from the pans and let them cool completely on the wire racks.

  • Serving Suggestion: When the cupcakes are completely cool, frost them with your favorite frosting.
