What You'll Need

1 tablespoon vegetable oil
2 corn tortillas (6-inch)
1/3 cup refried beans, heated
2 eggs
2 tablespoons Pace® Chunky Salsa
2 tablespoons sour cream
2 tablespoons guacamole

How to Make It

    Heat the oil in a 10-inch skillet over medium heat. Add the tortillas and cook for 2 minutes or until they're lightly browned. Place them on 2 serving plates. Divide the refried beans and spread evenly over each tortilla.

    In the same skillet, cook the eggs sunny side up. Place one egg on top of the refried beans on each tortilla. Top with 1 tablespoon each, salsa, sour cream and guacamole.
