What You'll Need

1 1/2 cups pancake mix
3/4 cup instant mashed potato flakes
1/4 teaspoon salt
1 tablespoon sugar
1 1/2 teaspoons baking soda
2 eggs, beaten
3 tablespoons canola oil
1 1/2 cups buttermilk
1/2 cup milk
1 teaspoon vanilla extract
3/4 cup diced pineapple
1 tablespoon butter
2 cups diced hams

How to Make It

    Stir the pancake mix, potatoes, salt, sugar and baking soda in a large bowl. Add the eggs and oil and mix well.

    Add the buttermilk, milk and vanilla and whisk until smooth. Add the pineapple and stir to coat.

    Heat the butter in a 12-inch skillet over medium heat. Pour about 1/2 cup batter into the skillet for each pancake. Cook for 3-4 minutes on each side or until the pancakes are golden brown on both sides. Remove the pancakes from the skillet. Cover and keep warm. Repeat with the remaining batter, adding additional butter, if needed.

    Evenly divide the ham among the pancakes and roll the pancakes around the ham.

  • Recipe Note: The recipe makes 6 large pancakes, but you may use 1/4 cup batter for smaller pancakes, if desired.
  • Serving Suggestion: Serve the pancakes plain, with syrup, sprinkle with powdered sugar or top with any of your favorite toppings.
