What You'll Need

2 tablespoons butter
1 cup sliced mushroom (about 3 ounces)
1 medium onion, chopped (about 1/2 cup)
1/3 cup uncooked barley
1 can (26 ounces) Campbell’s® Condensed Cream of Mushroom Soup or Campbell’s® Condensed 98% Fat Free Cream of Mushroom Soup
3 cups water
1/4 teaspoon dried thyme, crushed
1/4 teaspoon black pepper
1 1/2 tablespoons Chopped fresh parsley

How to Make It

    Heat the butter in a 3-quart saucepan. Add the mushrooms and onion and cook until they're tender. Add the barley and cook until it's lightly browned.

    Stir the soup, water, thyme and pepper in the saucepan. Heat to a boil. Reduce the heat to low. Cover and cook for 40 minutes or until the barley is tender. Garnish with parsley.
