What You'll Need

Vegetable cooking spray
1 cup whole wheat or all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
6 tablespoons butter, softened
1 cup granulated sugar
1/2 cup Jif® creamy peanut butter
2 eggs
1 1/2 teaspoons vanilla extract
1 cup flaked coconut
1 cup confectioners' sugar
Light cream

How to Make It

    Heat the oven to 350ºF.  Spray a 2-quart shallow baking pan with the cooking spray.  Stir the flour, baking powder and salt in a medium bowl.

    Beat the butter and granulated sugar in a medium bowl with an electric mixer on medium speed until the mixture is fluffy.  Add the peanut butter, eggs and 1 teaspoon vanilla extract, beating well after each addition.  Reduce the speed to low.  Beat in the flour mixture just until combined.  Stir in the coconut.  Spread the batter in the baking pan.

    Bake for 25 minutes or until a toothpick inserted in the center comes out clean.  Let cool in the pan on a wire rack for 20 minutes.  Cut into 24 bars.

    Place the confectioners' sugar into a medium bowl.  Add the cream, 1 tablespoon at a time, until the icing is the desired consistency.  Stir in the remaining vanilla extract and an additional dash of salt.  Drizzle the icing over the bars.
