What You'll Need

1 1/4 pounds skinless, boneless chicken breast halves, cut into thin strips
1/2 cup all-purpose flour
2 tablespoons olive oil
1 package (8 ounces) sliced fresh mushrooms  (about 2 1/4 cups)
1 cup Swanson® Chicken Stock
2 cloves garlic, minced
1 pint grape tomatoes  (about 2 1/2 cups)
3 green onions, cut into 1-inch pieces (about 1/3 cup)

How to Make It

  • 1

    Season the chicken as desired.  Coat the chicken with the flour.

    Heat the oil in a 12-inch skillet over medium-high heat.  Add the chicken and cook until well browned, stirring often.  Remove the chicken from the skillet.

    Add the mushrooms and 1/4 cup stock to the skillet and cook until the mushrooms are tender, stirring occasionally.

  • 4

    Add the garlic and tomatoes to the skillet and cook and stir for 1 minute.  Add the remaining stock and heat to a boil.  Return the chicken to the skillet.  Reduce the heat to low.  Cook for 5 minutes or until the chicken is cooked through.  Sprinkle with the green onions.
