What You'll Need

1 1/4 pounds skinless, boneless chicken breast halves
1 tablespoon grated orange zest
1 cup sugar-free orange marmalade
1/3 cup raspberry vinegar
1/8 teaspoon ground black pepper
3 1/2 cups cooked wild rice
8 green onions, sliced (about 1 cup)
1 cup green seedless grapes cut in half
1/4 cup chopped pecans, toasted

How to Make It

    Spray a 12-inch skillet with vegetable cooking spray and heat over medium-high heat for 1 minute.  Add the chicken and cook for 15 minutes or until it's well browned on both sides and cooked through.  Remove the chicken to a cutting board.  Cut the chicken into strips.

    Beat the orange zest, marmalade, vinegar and black pepper in a small bowl with a fork or whisk.

    Place the chicken, rice, green onion, grapes and pecans, if desired, into a large bowl.  Add the marmalade mixture and toss to coat.
