What You'll Need

Vegetable cooking spray
3 cups cut-up fresh vegetables (broccoli florets, sliced carrots and green or red pepper strips)
4 skinless, boneless chicken breast halves (about 1 pound), cut into very thin strips
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Broccoli Soup
1/3 cup water
1 tablespoon soy sauce
4 cups hot cooked rice

How to Make It

  • 1

    Spray a 10-inch skillet with the cooking spray and heat over medium-high heat for 1 minute.  Add the vegetables and stir-fry until tender-crisp.  Remove the vegetables from the skillet. Remove the skillet from the heat.

    Spray the skillet with the cooking spray and heat over medium-high heat for 1 minute.  Add the chicken and stir-fry until well browned.  Remove the chicken from the skillet.

    Stir the soup, water and soy sauce in the skillet and heat to a boil.  Reduce the heat to low.  Return the vegetables and chicken to the skillet.  Cook until the mixture is hot and bubbling, stirring occasionally.  Serve the chicken mixture over the rice.
