Campbell's Buckeyes Recipe

One of the great things about this recipe is that your children can help make them! And who doesn't like peanut butter and chocolate?  It's a great treat for parties or for lunchboxes.

What You'll Need

1 1/2 cups smooth (creamy) peanut butter
1/2 cup (1 stick) butter, softened
1 teaspoon vanilla extract
1/2 teaspoon salt
3 cups to 4 cups confectioners' sugar
1 pound chocolate-flavored candy coating
2 tablespoons vegetable shortening

How to Make It

    Beat the peanut butter, butter, vanilla extract and salt in a large bowl with an electric mixer at low speed.  Slowly add 2 cups confectioners' sugar and beat just until blended.  Add the remaining confectioners' sugar, 1/2 cup at a time, until the mixture is firm enough to be shaped into balls.  Shape the mixture into about 96 (3/4-inch) balls.  Place the balls onto baking sheets.  Refrigerate for 1 hour or until firm.

    Place the candy coating and shortening into a medium microwavable bowl.  Microwave on MEDIUM for 30 seconds.  Stir.  Repeat until the mixture is melted and smooth.

    Dip each ball into the coating mixture, using a toothpick to hold the ball.  Place the dipped balls onto wax paper-lined baking sheets.  Refrigerate for 30 minutes or until firm.  Store the balls in an airtight container at room temperature.
