What You'll Need

8 ounces (1 cup) V8® 100% Vegetable Juice
1 tablespoon vegetable oil
1/4 teaspoon garlic powder or 1 clove garlic, minced
15 ounces (1 can) black beans, rinsed and drained
15 ounces (1 can) small white beans, rinsed and drained
8 ounces whole kernel corn, drained (1 can)
1 large green pepper or red bell pepper, chopped (about 1 cup)
1 medium onion, chopped (about 1/2 cup)

How to Make It

  • 1

    Stir the vegetable juice, oil, garlic, black beans, white beans, corn, pepper and onion in a large bowl until evenly coated. Refrigerate for at least 2 hours.
