What You'll Need

1/4 cup vegetable oil
3 large russet potatoes (about 1 1/2 pounds), cut lengthwise in quarters
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup grated Parmesan cheese (optional)

How to Make It

    Heat the oven to 425ºF.

    Pour the oil into a 3-quart shallow baking pan.  Add the potatoes and turn to coat.  Season the potatoes with the paprika, salt and black pepper.  Sprinkle with the cheese, if desired.

    Bake for 30 minutes or until the potatoes are tender.
