Vegetable Salad with Sun-Dried Tomatoes & Croutons

No cooking is needed to make this colorful vegetable salad that gets great flavor from sun-dried tomatoes and prepared Italian dressing.

1 large yellow squash  or zucchini, cut in half lengthwise and sliced (about 1 1/2 cups)

1 large green or red pepper, cut into 1-inch pieces (about 1 1/2 cups)

1 cup Pepperidge Farm® Whole Grain Seasoned Croutons

2 medium carrots, shredded (about 1 cup)

1 cup broccoli florets

1/2 cup drained marinated sun-dried tomatoes, sliced

1/2 cup prepared Italian salad dressing

  • Place the squash, pepper, croutons, carrots, broccoli and tomatoes into a large bowl. Add the dressing and toss to coat. Serve immediately.
