Beef Taco Skillet

The flavors of the Southwest come alive in this easy skillet supper featuring ground beef, picante sauce, tortillas and Cheddar cheese - it's a family favorite that's on the table in just 25 minutes.

1 pound ground beef

1 can (10 3/4 ounces) Campbell's® Condensed Tomato Soup  (Regular or Healthy Request®)

1/2 cup Pace® Picante Sauce

1/2 cup water

6 flour tortillas (6-inch), cut into 1-inch pieces

1/2 cup shredded Cheddar cheese

  • Cook the beef in a 10-inch skillet over medium-high heat until well browned, stirring often to separate meat.  Pour off any fat.
  • Stir the soup, picante sauce, water and tortillas in the skillet and heat to a boil.   Reduce the heat to low.  Cook for 5 minutes.  Stir the beef mixture.  Top with the cheese.

RECIPE TIPS

  • Flavor Variation: for Creamy Mexican Fiesta Skillet, stir in 1/2 cup sour cream with the soup.
  • Flavor Variation: for Ranchero-Style Skillet, use corn tortillas instead of flour tortillas and shredded Mexican cheese blend instead of Cheddar.
  • Serving Suggestion: Serve with a mixed green salad with Italian salad dressing and corn on the cob. For dessert serve a store-bought flan.

    This is an excellent recipe! My husband has asked for this once a week since I first made it (to understand how significant this is...i've been trying new things from this site for a year now and this is the first thing he has asked me to make again). I did make a few changes...i cooked the meat with taco seasonings and added the tortillas in the last couple of minutes of cooking so they weren't soggy. Overall, a fantastic recipe that has made it into our regular line up.

    This recipe is great on a night when you need a quick fix for dinner that everyone will love. The flavor is good. Plus, it is easy to enhance the flavor by adding additional spices like taco seasoning or a dash of red pepper. I've tried it with both the corn and flour tortillas, and personally, I think it tastes better when made with the flour tortillas. The corn tortillas detract from the other flavors in the recipe.

    I never like the color of unseasoned meat, so I added half a packet of taco seasoning to the meat before I put the water, salsa, and soup in. It was fantastic. I love this recipe!!

    Very very yummy, but when I was adding all of the ingredients to the cooked beef I added a packet of taco seasoning:) It just made the recipe so much more delicious! It could use a little bit of a crunch....fritos maybe?
