I used a package of shredded Mexican cheese and mixed it into the casserole then I added sharp cheddar on top. I also couldn't find the soup so I mixed Cream of Chicken soup and chile verde salsa to the soup. It turned out great. The kids loved it.

I have a hard time getting the Creamy Chicken Verde Soup at my grocery store so I use the Fiesta Nacho Cheese soup and it tastes Great!

I would love to make this again. This can makes the most amazing enchiladas and people ask me for my recipe all the time :) This is our favorite meal and after sharing it with friends it has become their favorite too!
