Basil Chicken Parmesan

What's for dinner tonight?  Try this simple, stovetop version of Chicken Parmesan that gets extra flavor from basil, green pepper and white wine.  It's ready to enjoy in just 30 minutes!

2 tablespoons all-purpose flour

1 1/2 teaspoons dried basil leaves, crushed

4 skinless, boneless chicken breast halves  (about 1 pound)

1 tablespoon olive oil

1 can (10 3/4 ounces) Campbell's® Healthy Request® Condensed Tomato Soup

2 tablespoons Chablis or other dry white wine

2 tablespoons water

2 tablespoons grated Parmesan cheese

1/4 cup finely chopped green pepper

1 cup regular long-grain white rice, cooked without salt, according to package directions (about 3 cups)

  • Stir the flour and 1 teaspoon basil on waxed paper or plate. Lightly coat the chicken with the flour mixture.
  • Heat the oil in a 10-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until it's well browned on both sides. Remove the chicken from the skillet and set aside.
  • Stir the soup, wine, water and remaining basil in the skillet and heat to a boil. Return the chicken to the skillet. Reduce the heat to low. Cover and cook for 5 minutes or until the chicken is cooked through, stirring occasionally. Top each chicken breast half with cheese and pepper. Cook uncovered, until the cheese begins to melt. Serve with the rice.

    I love this recipe. I used more cheese and wine. Sometimes I don't bother with flouring the meat first, when I am in a hurry. I just put the basil in the sauce. I give this recipe to friends all the time.
