What You'll Need

1 cup Swanson® Chicken Stock
1/8 teaspoon ground black pepper
1 turkey (12 to 14 pounds)
1 lemon, thinly sliced
1 bunch fresh sage leaves
1/2 cup (1 stick) butter, melted

How to Make It

    Stir the stock and black pepper in a small bowl.

    Remove the package of giblets and neck from the turkey cavity. Rinse the turkey with cold water and pat dry with a paper towel.

    Loosen the skin carefully from the breast meat, using your fingers. Place the lemon and sage under the skin. Tie the ends of the drumsticks together.

    Place the turkey, breast-side up, on a rack in a roasting pan. Brush the turkey with the butter and then the stock mixture. Insert a meat thermometer into the thickest part of the meat, not touching the bone.

    Roast at 325°F. for 3 hours or until the thermometer reads 165°F., basting occasionally with the stock mixture. Begin checking for doneness after 2 1/2 hours of the roasting time. Let the turkey stand for 10 minutes before slicing.
