What You'll Need

2 3/4 cups all-purpose flour
1/4 teaspoon salt
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 cup butter (2 sticks)
1/2 cup vegetable shortening
1/2 cup plus 2 tablespoons sugar
2 eggs
2 teaspoons ground cinnamon

How to Make It

    Heat the oven to 400°F. Stir the flour, salt, cream of tartar and baking soda in a medium bowl.

    Beat the butter, shortening and 1/2 cup sugar in a large bowl with an electric mixer on medium-high speed until the mixture is light and fluffy. Beat in the eggs, one at a time until blended.

    Reduce the speed to low. Gradually beat the flour mixture into the butter mixture until blended. Stir 2 tablespoons sugar and cinnamon in a small bowl.

    Shape the dough into 48 (1-inch) balls and roll them in the cinnamon mixture. Place the balls 2 inches apart on an ungreased baking sheet. Bake for 8 minutes or until the edges of the cookies are lightly browned.

    Remove the cookies from the baking sheet and cool them on wire racks.
