What You'll Need

18 (about 1 ounce each) matzos, broken into pieces
6 medium apples, peeled and diced
1 cup slivered almonds
3 teaspoons kosher margarine, melted
6 egg yolks
1 teaspoon kosher vanilla extract
1/2 cup granulated sugar
1/2 cup brown sugar
2 teaspoons ground cinnamon
1/2 teaspoon freshly grated nutmeg
6 egg whites

How to Make It

    Heat the oven to 325°F.  Place the matzos into a large bowl and add cold water to cover.  Let stand for 2 minutes.

    Remove the matzos from the bowl and squeeze out the excess water.  Stir the matzos, apples, almonds and margarine in a large bowl.

    Beat the egg yolks, vanilla extract, granulated sugar, brown sugar, cinnamon and nutmeg in a medium bowl with a fork or whisk.  Add the egg yolk mixture to the matzo mixture and stir to coat.

    Beat the egg whites in a large bowl with an electric mixer on high speed until stiff peaks form.  Fold in the matzo mixture.  Pour the batter into a greased 3-quart shallow baking pan.

    Bake for 1 hour or until a knife inserted in the center comes out clean.
