What You'll Need

8 large potatoes (about 4 pounds), peeled
1 large red onion, diced (about 1 cup)
3 stalks celery, diced (about 1 1/2 cups)
Freshly ground black pepper
2 cups mayonnaise

How to Make It

    Place the potatoes into a 4-quart saucepan and add water to cover.  Heat over medium-high heat to a boil.  Reduce the heat to low.  Cook for 15 minutes or until the potatoes are tender.  Drain the potatoes well in a colander and let cool.  Cut the potatoes into cubes.

    Stir the onion, celery, black pepper and mayonnaise in a large bowl.  Add the potatoes and toss to coat.  Cover and refrigerate until ready to serve.
