Salsa Verde Meatloaf

This kicked-up version of meatloaf is made with salsa verde and crushed tortilla chips for fabulously delicious results.

1 1/4 cups Pace® Salsa Verde

1 1/2 pounds ground beef

1 egg

3/4 cup finely crushed tortilla chips

4 green onions, minced (about 1/2 cup)

  • Thoroughly mix 3/4 cup salsa, beef, egg, tortilla chips and green onions in a large bowl.
  • Place the beef mixture into a 9 x 5-inch loaf pan. Top with the remaining salsa.
  • Bake at 350°F. for 1 hour or until the meatloaf is cooked through.  Let the meatloaf stand for 10 minutes before slicing.
