Barb's Banana Bread

This is easy enough for kids to mix and bake. It's also one of the best banana breads we've ever tasted!

1 3/4 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup (1 stick) unsalted butter, softened

3/4 cup sugar

2 eggs  

2 large ripe bananas, mashed (about 1 cup)

3 tablespoons milk

2 teaspoons vanilla extract

1/2 cup chopped walnuts or pecans  

  • Heat the oven to 350°F.  Lightly grease an 8 1/2-by-4 1/2-by-2 1/4-inch loaf pan.
  • Stir the flour, baking powder, baking soda and salt in a medium bowl.
  • Beat the butter and sugar in a large bowl with an electric mixer on medium-high speed until the mixture is light and fluffy. Add the eggs one at a time, beating well after each addition.
  • Reduce the speed to low.  Beat in the bananas, milk and vanilla extract just until combined.  Slowly add the flour mixture and beat just until combined.  Stir in the walnuts, if desired.  Pour the batter into the pan.
  • Bake for 45 minutes or until a toothpick inserted in the center comes out clean.  Let the bread cool in the pan on a wire rack for 10 minutes.  Remove the bread from the pan and let cool completely on a wire rack.

    The banana bread is delicious! I've made it several times. I've also made it with Splenda and it tasted just as good as with sugar.

    This is similar to a recipe I used as a little girl. I didn't have butter, so I used shortening (like in my old recipe). It was DE-lish!
