Sweet & Spicy Picante Chicken

Looking for an easy-to-make dish that's loaded with flavor?  Try this family-pleasing dish that mixes picante sauce, brown sugar and mustard to make a savory sauce for moist and juicy baked chicken.

4 skinless, boneless chicken breast halves  (about 1 pound)

1 jar (16 ounces) Pace® Picante Sauce  

3 tablespoons packed light brown sugar

1 tablespoon Dijon-style mustard

1 cup regular long-grain white rice, prepared according to package directions (about 3 cups)

  • Heat the oven to 400°F. Place the chicken into a 2-quart shallow baking dish. Stir the picante sauce, brown sugar and mustard in a small bowl. Pour the picante sauce mixture over the chicken.
  • Bake for 20 minutes or until the chicken is cooked through. Serve the chicken and sauce with the rice.

RECIPE TIPS

  • Serving Suggestion: Serve with steamed cut green beans. For dessert serve lemon sorbet.

    I'm 12 and have been making this since I read it on the bottle a couple years ago. Everybody likes it and even when I forget the exact amounts, it always turns out edible. I love beans so I add black beans to the sauce and serve it with refried beans on the side.

    Made it this weekend, needless to say the platter was cleaned and everyone was looking for seconds. I doubled everything to ensure I had enough sauce, I also added extra chopped onions.
