Skillet Chicken with Garden Broccoli Brown Rice

Vegetable cooking spray

4 skinless, boneless chicken breast halves  (about 1 pound)

1 carton (18.3 ounces) Campbell's® V8® Garden Broccoli Soup

1/2 cup water

1/4 teaspoon paprika

1/4 teaspoon ground black pepper

1 1/2 cups uncooked instant brown rice  

2 cups fresh or frozen broccoli florets

  • Spray a 10-inch skillet with the cooking spray and heat over medium-high heat for 1 minute. Add the chicken and cook for 10 minutes or until it's well browned on both sides. Remove the chicken from the skillet.
  • Stir the soup, water, paprika and black pepper in the skillet and heat to a boil. Stir in the rice and broccoli. Reduce the heat to low. Return the chicken to the skillet. Sprinkle additional paprika and black pepper over the chicken. Cover and cook for 5 minutes or until the chicken is cooked through and the rice is tender.

  • Ingredient Note: Cooking times for brown rice vary. For best results, use instant whole grain brown rice.

    This was very good, and easy to make. I made it for my niece and nephew and they loved it. I will make this again. I cut the chicken up into pieces instead of in whole pieces.

    This was a quick and easy meal and I will try it again! The store did not have the V8 soup the recipe calls for so I bought two cans of Campbell's Cream of Broccoli soup and that was yummy. I used the frozen broccoli and thought it tasted just fine! The leftovers are great too!
