Hearty Lasagna Soup

Are you in the mood for lasagna, but don't have the time?  Try this clever soup that has all the  flavors of your favorite lasagna...and it's on the table in just 35 minutes.

1 pound ground beef

1 small onion, chopped (about 1/4 cup)

1 teaspoon minced garlic

1/4 teaspoon dried parsley flakes

3 1/2 cups Swanson® Beef Broth (Regular, 50% Less Sodium or Certified Organic)

1 can (14 .5 ounces) diced tomatoes

1/4 teaspoon Italian seasoning, crushed

1 1/2 cups uncooked mafalda or corkscrew-shaped pasta

1/4 cup grated Parmesan cheese

  • Cook the beef, onion, garlic and parsley in a 3-quart saucepan over medium-high heat for 10 minutes, or until it's well browned, stirring often to break up the meat. Pour off any fat.
  • Stir the broth, tomatoes and Italian seasoning in the saucepan and heat to a boil.
  • Stir the pasta in the saucepan. Reduce the heat to medium and cook for 10 minutes or until the pasta is tender. Stir in the cheese. Serve with additional cheese, if desired.

RECIPE TIPS

  • Serving Suggestion: Serve with an Iceberg lettuce salad with Italian vinaigrette.  For dessert serve fresh apple slices.

    Wow - an instant favorite! This is very good. . .we used rotini pasta. . .changing to whole wheat pasta would be easy, add more fiber, and wouldn't really impact taste or appearance much.

    This was such a great recipe and so easy! I was unable to find mafalda pasta so I used bow-ties instead. I also used Italian style diced tomatoes and left out the Italian seasoning. It was perfect! I sprinkled some mozzarella cheese on top and served it with buttered Italian bread. I've made it twice and it is now one of my favorites.

    It was just okay. It's not something I would really make again. My husband thought it was just okay too. There are many good reviews but it just wasn't for us I guess. It was simple and easy though and very cheap to make.

    We love this recipe at my house. My son isn't crazy about tomatoes...but he asks me to make this every single week...even in the summer.
