Meatball Sandwiches

Set those ordinary meatballs aside...this version gets great flavor from crushed tortilla chips and picante sauce.  Served in Italian sauce, these meatballs make a great sandwich, but they're good enough to eat on their own.

1 cup Pace® Picante Sauce

1 pound ground beef

1 cup crushed tortilla chips

1 egg, beaten

1 tablespoon chopped fresh parsley or 1 teaspoon   dried parsley flakes

1 1/2 cups Prego® Traditional Italian Sauce or Prego® Marinara Italian Sauce

6 long hard rolls, split

  • Mix 1/2 cup picante sauce, beef, chips, egg and parsley thoroughly and shape firmly into 18 (1 1/2-inch) meatballs.
  • In a 10-inch skillet over medium heat, stir the Italian sauce and remaining picante sauce. Add the meatballs and heat to a boil.  Reduce heat to low. Cover and cook for 20 minutes or until the meatballs are thoroughly cooked, stirring occasionally.
  • Place the meatballs and sauce in the rolls.
