Are rice or mashed potatoes on the menu tonight? Try mixing in a little something to launch them from ordinary to extraordinary.

Mashed potatoes
  • Blue cheese topped with diced fresh tomatoes
  • Cooked chopped spinach and crumbled goat cheese
  • Roasted garlic (or boil cloves of garlic with the potatoes and mash)
  • Diced sautéed bacon and shredded Cheddar cheese
  • Minced chipotle chiles in adobo sauce
  • Chopped Chipotle Chiles and shredded Cheddar
  • Horseradish and sour cream topped with chives
  • Boursin cheese

Rice
  • Any minced fresh herb (parsley, chives, cilantro, tarragon)
  • Feta cheese and minced lemon zest
  • Toasted almonds or pecans
  • Roasted or grilled sliced mushrooms
  • Sliced green onions
  • Cooked peas
  • Saffron or ground tumeric (add to the cooking water)
  • Coconut milk (use 1/2 coconut milk and 1/2 water for cooking the rice)

Vinaigrettes
Make a standard vinaigrette (1/4 cup vinegar, 1/4 cup olive oil, 1 tablespoon Dijon mustard, 1 tablespoon honey), then make it your own by whisking in:
  • Blue cheese
  • Fresh basil and minced lemon zest
  • Herbs, herbs, herbs
  • Molasses or maple syrup (use in place of the honey)
  • Crushed raspberries
  • Orange or apple juice concentrate
  • Heavy cream for a light creamy dressing

Sour cream, mayonnaise or yogurt
  • Minced lemon, orange or lime zest
  • Mashed avocado
  • Wasabi paste or powder
  • Minced chipotle chiles in adobo sauce
  • Minced fresh herbs (dill, basil, chives, parsley, cilantro)
  • Pureed roasted red pepper
  • Horseradish
  • Honey
